The Wellington Joins Dining Out For Life® San Diego

Don’t miss The San Diego LGBT Community Center's annual Dining Out for Life®! On Thursday, April 25, 2013, over 100 participating restaurants, bars, coffeehouses and nightclubs in San Diego will donate a minimum of 25% of sales for The Center’s HIV/AIDS services and prevention programs. Interview with The Wellington Steak and Martini Lounge

What type of cuisine do you offer? Please share some Menu Highlights.

    The Wellington’s cuisine is rooted in executive chef Brian Johnston’s respectful, savvy reworkings of timeless dishes. Our signature dish, beef Wellington, is the marriage of puff pastry, crimini mushroom duxelle and a perfectly cooked filet. Delicate salmon en croute, crispy duck confit and a perfectly charred steaks from a variety of breeds of cattle also grace the menu. The martini roster is long and awash with creativity and the wine list boasts over 40 choices both domestic and international.

Why did you choose the recipe listed below to share from among all of the others?

    The "Goose a l'Orange" is our newest martini for spring. We thought you'd like to know what we've been creating behind the bar!

What sets you apart from other restaurants serving the same kind of cuisine?

    The Wellington is the most intimate and sexy restaurant in San Diego. There is no other like it. When you step into the darkness you may wonder if you've been transported to an earlier time, when the luxurious vices were celebrated and elegance was an expectation. With only 10 tables beneath of flock of vintage chandeliers, we are one of only 2 restaurants in the city that serves beef Wellington every day.

What is the biggest compliment you receive from your patrons?

    "The room is gorgeous and so romantic, the Wellington is amazing, the martinis are killer and the service is impeccable."

Why does your restaurant choose to participate in Dine Out For Life?

    It's a hugely important cause and the event is run so incredibly well. We love the idea of having an "ambassador" - the night just becomes a big party for staff and guests alike!

What other charitable organizations do you work with?

    SD Council on Literacy: "Eat Drink Read", SD Food Bank "Backpack 4 Kids", Social Services Auxiliary: Wine & Roses, Just Call Us Volunteers: serving meals to the homeless, Mama's Kitchen, and Chef Brian and owner Trish Watlington both volunteer at Olivewood Gardens.


Recipe:

Goose a L'orange Martini

    1oz. Grey goose Orange Vodka
    1oz. Stoli Vanilla Vodka
    1/2 oz simple syrup
    1/2 oz fresh orange juice
    1/2 oz sweet & sour

    Shake over ice and strain, garnish with orange twist
